Flash games used to be God-awful, but lately I've found some genuinely brilliant and original offerings.
Magic Pen
The goal is to move a ball or a box to a given point on the screen using only physics and your trusty magic pen. More addictive then crack.
Don't watch too much of the video, because most of the fun is figuring out how to engineer a victory on each level.
You Have To Burn The Rope
Just go play it. I don't want to spoil it for you.
Desktop Tower Defense
Build a maze of guns in order to defeat increasingly more powerful enemies. Simple but addictive.

The classic Infocom Hitchhiker's Guide to the Galaxy through a flash Z-interpreter.
And the ”Grow” series is pretty good too. You're presented different scenarios and have to click events in the right order (each event will react to another) to max out all you levels and "win" the game. My favorites are Grow Island, Grow Nano volume 3, and Grow RPG.
